Ingredients
- 4 cloves garlic
- 2 tablespoons lemon juice
- 6 tbsp flaxseed oil
- 6 tbsp apple cider vinegar
- 2 tsp maple syrup
- 2 tsp dried basil
- 1 tsp thyme
- Dash of dulse
- Dash of cayenne
- ¾ cup medjool dates, pitted
- ¾ cup soaked raw almonds
- 4 cups fresh spinach, washed & dried
Spinach and Date Salad:
Note: almonds are best soaked overnight.
Dressing: Peel and thinly slice garlic, marinate in fresh lemon juice for 5 to 10 minutes. Combine the garlic, oil, vinegar, maple syrup and herbs in small bowl and mix well. Add a dash of dulse and cayenne to taste.
Salad: Chop dates and soaked almonds, then mix with the Dressing. Let stand at least an hour.
When ready to serve, pour dressing over the spinach leaves and toss thoroughly.
