- 1 medium beet
- 4 cups of lettuce
- 1 handful snow peas
- ½ cucumber
- ½ small onion
- ½ cup soaked sunflower seeds
- Apple cider vinegar for drizzle
- Olive oil for drizzle
Red and Green Salad:
Peel beet if necessary and coarsely grate. Chop sunflower seeds. for topping.
Dice cucumber and onion. Slice snow peas into bite size pieces. Chop or tear lettuce into bite size pieces.
Toss the lettuce, onion, snow peas and cucumber together.
Top each of plate with coarsely grated beet and sunflower seeds.
Drizzle with apple cider vinegar and olive oil.
