- 1 lb potatoes
- 1 ½ cup red cabbage, chopped
- 2 avocados, cubed
- 6 tbsp soaked pumpkin seeds, chopped
- 6 tbsp soaked sunflower seeds, chopped
- 4 tbsp olive oil
- 3 tbsp fresh lemon juice
- Fresh parsley or watercress to garnish
Rainbow Potato Salad
Boil the potatoes, cool and cut into cubes.
Toss with the remaining ingredients.
Garnish with parsley or watercress if desired.
