Quinoa with Snow Peas and Orange

Ingredients

  • ⅓ cup hazelnuts, sprouted, chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • Zest of 1 orange
  • 5 tbsp orange juice
  • 2 cloves garlic, minced
  • 3 - 4 cups quinoa, cooked
  • 4 green onions
  • 2 cups snow peas, washed, ends snapped
  • ⅓ cup fresh dill, chopped

Quinoa with Snow Peas and Orange:

Combine oil, vinegar, zest, orange juice, minced garlic and whisk well.

Steam snow peas for 3 minutes.

Add quinoa, green onion, peas, sprouted hazelnuts and dill to bowl and gently toss.
